Ruba Elhourani, Clinical Dietician and Head of Nutrition Department at RAK Hospital, says perishable foods can enter the food safety ‘danger zone’ quickly in hot conditions. Food safety guidelines recommend that perishable foods should not remain above 5°C and below 60°C for more than two hours, while when ambient temperatures exceed 32°C, that limit drops to one hour.
